Out of all the European capitals, Madrid is the one that has most absorbed the regional flavours of the entire country , dating back to the time of Philip II, when Madrid became the capital of Spain. Since then, immigrants arrived in mass from every corner of Spain, bringing with them their culinary traditions.
Today these recipes are commonly traditionally considered "Madrileño" and many can be sampled in our restaurants: "Madrileño" stew which is normally served on Fridays, garbanzo stew, tripe à la madrileña, garlic soup, potato omelette and delicious lamb and veal dishes. All while making good use of the freshest vegetables, including Aranjuez asparagus, with its excellent quality and flavour.
